Prep the ingredients before turning on your air fryer. Line the air fryer trays with parchment paper and set them aside. In a small bowl, whisk together an egg. On a wide plate, mix together the shredded cheeses. Then, slice avocados in ½-inch thick pieces. Each medium-sized avocado should give you about 6 slices (3 slices per open avocado half). Choose avocados that are on the greener side – the firmer texture will be easier to handle and will soften in the air fryer.
Preheat the air fryer to 350 degrees. One by one, dip an avocado slice into the egg, then roll in the shredded cheese mixture and arrange on the prepared air fryer trays. Use a fork to aid you in dipping the avocado slices in the egg. Keep one hand dry for rolling the avocado in the cheese. Also, make sure any excess egg drips off the avocado slices before rolling them in the cheese. Otherwise, the cheese will clump up and won’t stick to the avocado.
Bake the trays of three cheese avocado slices for 12-15 minutes, until the cheese has a crunch to it and is golden brown. You don’t need to flip the avocado slices over while baking, but check to make sure you don’t need to rotate your trays to ensure even coloring. Allow the finished avocado slices to cool for a few minutes before eating. You can adjust the amount of three cheese avocado slices you eat in your food log. The recommended amount of avocado slices for a snack or Keto side dish would be 3 pieces. Read through this recipe’s intro for suggestions on Keto dipping sauces.
