Thinly slice the cabbage, onion and garlic. Melt the butter in a large saucepan over a medium heat. Add the cabbage, onion, garlic, lemon zest and thyme. Stir well to combine and sweat for 2-3 minutes until fragrant.

Add the stock and bring to a gentle boil. Reduce to a steady simmer, cover and cook gently for 10 minutes stirring occasionally until the cabbage is soft and no liquid remains. Serve hot.
