Peel the outer skin from the cucumber and discard. Peel the cucumber flesh into 12 wide ribbons.
Spread a thin layer of cream cheese over each cucumber ribbon and scatter over a sprinkling of Italian seasoning, salt and pepper.
Slice each chicken slice into 4 strips so that they are roughly the same size as the cucumber pieces. Lay the chicken over the cucumber.
Spread another thin layer of cream cheese over the chicken.
Roll each cucumber and chicken strip up tightly so you have 12 pinwheels. Refrigerate until ready to serve.
