Heat the olive oil in a skillet over a low/medium heat. Thinly slice the onion and garlic and quarter the tomatoes. Add to the skillet and cook gently for 2-3 minutes until tender.
Step 2
Roughly chop the kale into the skillet and stir well to combine, cooking for a minute to soften.
Step 3
Add the stock and lemon zest and bring to a simmer. Stir well and simmer for 5-10 minutes until all the stock has evaporated and the kale is tender.
