How to Make It

Step 1

Heat the olive oil in a skillet over a low/medium heat. Thinly slice the onion and garlic and quarter the tomatoes. Add to the skillet and cook gently for 2-3 minutes until tender.

Step 2

Roughly chop the kale into the skillet and stir well to combine, cooking for a minute to soften.

Step 3

Add the stock and lemon zest and bring to a simmer. Stir well and simmer for 5-10 minutes until all the stock has evaporated and the kale is tender.

  • Organic Tuscan Kale by Organics – 2 cups
  • Tomato Raw (includes Cherry, Grape, Roma) – 2 medium – 2 3/5″ diameter
  • Olive Oil – 1-½ tablespoon
  • Garlic – 1 clove
  • Lemon Peel Or Zest Raw – 1 tsp
  • Vegetable Broth, Bouillon Or Consomme – ⅔ cup
  • Red Onion – ¼ medium – 2 1/2″ diameter
