Add the erythritol, cream cheese, lemon juice and vanilla to a food processor. Blend until smooth and creamy.

Add the cream to a mixing bowl and whisk vigorously until thick and fluffy. Alternatively you can use a stand mixer with whisk attachment to whip the cream.

Carefully fold the lemon cream cheese mixture into the whipped cream until well combined. Refrigerate until ready to serve.
