How to Make It

Step 1

Roughly chop the tomatoes. Dice the pepper and cucumber into rounds. Finely dice the red onion. Add them to a large bowl. Add the extra virgin olive oil, red wine vinegar, salt, and oregano. Top with feta cheese and olives.

Step 2

When ready to serve, break the feta into pieces and mix well. You can also leave the feta whole for presentation. Enjoy!

  • Green bell peppers, raw – 1 medium – 2 1/2″ diameter x 2 3/4″
  • Onion, white, yellow or red, raw – 1 small
  • Cucumber, raw, with peel – 0.5 medium
  • Greek Olives, Pitted – 10 Olive
  • Olive oil – 4 tbsp
  • Red wine vinegar – 2 tbsp
  • Feta cheese – 200 g
  • Oregano, dried – 0.5 tsp
