This pesto infused mash is great to jazz up cauliflower for dinner time.Perfect served with an extra helping of pesto alongside chicken or pork.
How to Make It
Step 1
Break the cauliflower into florets. Add to a pan of boiling water and simmer until tender – about 6 minutes.
Step 2
Whilst the cauliflower is cooking you can prepare the pesto. Add the basil, Parmesan, pine nuts, lemon zest, lemon juice and garlic to a food processor. Blend to form a chunky paste.
Step 3
Add 4 tablespoons of olive oil, season to taste and blend to form a pesto.
Step 4
Transfer the pesto to a serving bowl. Add the cooked cauliflower to a food processor with 1.5 tablespoons of the pesto and the remaining olive oil. Blend to form a creamy mash. Taste and season further if required and serve with the remaining pesto for drizzling.
