These zesty roasted mushrooms and asparagus are baked until tender in aromatic garlic, lemon and butter.These make a great side to white fish, chicken or pork.
How to Make It
Step 1
Preheat the oven to 400 degrees Fahrenheit.
Step 2
Slice the mushrooms and remove the tough ends from the asparagus. Arrange in a small oven proof dish.
Step 3
Crush the garlic and add to a small bowl along with the melted butter, olive oil, lemon zest, salt and pepper. Mix well to combine.
Step 4
Drizzle the flavored butter over the vegetables and transfer to the oven to bake for 12 minutes until tender and golden, stirring halfway through.
