Add the heavy cream, erythritol, butter, and vanilla extract to a small saucepan. Whisk all the ingredients together. Place the pan over medium-low heat, and bring to a boil.

Stir the cream frequently to prevent burning. Once the mixture comes to a boil, drop the heat to low. Let the mixture simmer for 8-10 minutes until thick.
Step 3
Remove the saucepan from the heat, and pour the creamer into a heat-resistant glass jar or bottle. You can use it immediately, or place it in the fridge for 4 days. The mixture will thicken once it has cooled.
