Thinly slice the onion, dice the red pepper and celery, finely chop the cilantro, and shred or chop the chicken. Add all these ingredients to a bowl.
Step 2
Add the mayonnaise, curry powder, lime juice, cashews, black pepper, and salt. Mix until incorporated. Taste and season with salt to taste.
Step 3
Separate the lettuce head into 8 cups. Spoon the salad into the center of the lettuce leaves. Serve with extra lime wedges and cayenne pepper for an extra kick. Enjoy!
