Step 1

Preheat your oven to 380 F/190C. Lightly grease 3 ramekins, sprinkle the insides with 1 tbsp of almond flour, and set them aside. Crack the eggs and separate the whites from the yolks.

Add the butter to a small saucepan and place it over medium-low heat. Add 1 tbsp of almond flour and whisk for 2 minutes. Add the heavy cream and a pinch of salt.

Step 3

Whisk until the heavy cream reaches a simmer. Reduce the heat to low and let the mixture thicken for 3-4 minutes. Take the saucepan off the heat and whisk in the cheese and egg yolks. Set the saucepan aside.

Step 4

Add the egg whites to the bowl of your stand mixer. Beat on high until the egg whites are light, fluffy, and soft peaks have formed. Add 1/3 of the egg white mixture to the saucepan with the cream mixture.

Step 5

Fold to lighten up the mixture. Add the remaining whipped egg whites and carefully fold using a spatula. Divide the mixture into the prepared ramekins.

Step 6

Transfer to the oven and bake for 20 minutes. They should have puffed up and risen. Serve immediately before they deflate.
