This richly flavored cauliflower rice is cooked with creamy butter and aromatic garlic and tossed with crispy fried onions to serve.This makes a great side dish to curried meats.
How to Make It
Step 1
Thickly slice the onion. Heat the olive oil in a skillet over a medium heat and add the onion slices. Fry for 4-5 minutes or until golden and crisp at the edges. Remove from the skillet and set to one side.
Step 2
Melt the butter in the skillet. Crush the garlic and add to the pan along with the cauliflower rice and cook for a minute or so.
Step 3
Add the stock and simmer for 2-3 minutes or until the liquid has been absorbed and the rice is cooked through.
