How to Make It

Step 1

Add the green beans to a pan of boiling water and simmer for 4-5 minutes until just tender. Drain and refresh under cold water.

Step 2

Whilst the beans are cooking, quarter the tomatoes and radishes, dice the cucumber and avocado and roughly chop the lettuce. Add to a large salad bowl and toss to combine.

Step 3

Dice the green beans into thirds and add to the salad. Season with a little salt and pepper and toss to combine.

Step 4

Finely chop the chives and add to a mixing bowl with the lemon juice, olive oil and a touch more salt and pepper. Stir well.

Step 5

Drizzle the salad with the lemony chive oil to serve.

  • Radish, Raw – 4 small
  • Green Beans (string Beans), Raw – 3-½ ounce
  • Tomato Raw (includes Cherry, Grape, Roma) – 2 small – 2 2/5″ diameter
  • Romaine Lettuce – 2 cup
  • Chives, Raw – 2 teaspoon, cut pieces
  • Olive Oil – 1-½ tablespoon
  • Avocado – ½ each
  • Lemon Juice – ½ tablespoon
  • Cucumber – ¼ medium
  • Salt, Sea Salt – ¼ teaspoon
  • Black Pepper – ⅛ teaspoon
