How to Make It

Step 1

Heat the olive oil in a large saucepan or Dutch oven over a medium heat. Finely dice the onion and crush the garlic. Add the ground beef, onion, and garlic to the saucepan. Cook through until the beef is browned all over.

Step 2

Once the beef is browned, add the tomato paste, smoked paprika, cayenne pepper, salt and black pepper to the saucepan. Mix everything together well to combine. Cook for a few minutes more to warm the spices. Please feel free to adjust the quantities of spices according to personal taste.

Step 3

Add the tomato sauce and stock to the saucepan. Bring to a gentle boil and stir to combine. Reduce the soup to a simmer and cook for 10 minutes to allow the flavors to infuse and cook the beef through. You may use an alternative stock such as chicken or vegetable if preferred.

Step 4

While the soup is cooking, thinly shred the lettuce and finely slice the gherkins. Divide the soup evenly between four serving bowls. Divide the shredded lettuce evenly between the four bowls, then scatter over the grated cheese and sliced gherkins. Serve hot.

  • Hamburger or ground beef, 80% lean – 17.5 oz
  • Cheddar cheese – 4 tbsp, grated
  • Beef broth – 3 cup
  • Sweet pickles (gherkins) – 2 medium – 2 3/4″ long
  • Gourmet Collection Smoked Paprika – 1.5 tsp
  • Tomato paste – 1 tbsp
  • Extra virgin olive oil – 1 tbsp
  • Red pepper (cayenne), ground – 1 tsp
  • Tomato sauce – 1 cup
  • Lettuce, iceberg – 1 cup, shredded
  • Garlic – 1 clove
  • Onion – 0.5 medium – 2 1/2″ diameter
  • Salt, sea salt – 0.5 tsp
  • Black pepper – 0.13 tsp
