Season your steak with salt, pepper, onion powder, cumin, and paprika. Heat the olive oil in a pan over medium-high heat and set the steak in. Cook the steak to your liking. For this recipe, you may enjoy a charred steak with a medium to medium-well center. This should take 5-6 minutes per side.
Transfer the cooked steak to a cutting board to cool. Once rested for a couple minutes, slice the steak into 10-12 strips.
Return your pan to the stove. With the heat on low, toss drained diced tomatoes and chilis in the pan. Gently toss around until the excess moisture evaporates from the chilis and thy turn just slightly golden.
Stir the cream into the pan. Once the cream is hot (not simmering), stir the cheese in to make your queso sauce. Set the finished sauce aside to cool and thicken.
Serve the strips of steak with the hot queso sauce and fresh sliced avocado.
