Ground beef is seasoned like a cheeseburger with plenty of onion flavor. Then, diced tomatoes are added to the pot. For serving, you can include cheddar cheese and (at your discretion) sliced pickled and shredded lettuce as garnishes. Even a little sour cream would be good here!Jessica L.
How to Make It
Step 1
Heat the olive oil in a medium sized pot over medium heat and place in the ground beef. Season with all the seasonings and cook until browned and the fat has bubbled up in the pot.
Step 2
Stir the almond flour into the beef and reduce the heat to low. Stir the beef until the almond flour thickens in the fat a little.
Step 3
Pour the beef broth and diced tomatoes into the pot. Place a lid on and turn the heat up to bring the pot to a boil.
Step 4
Remove the lid and let the pot simmer openly for 4-5 minutes or until the broth reduces to a thickened stew.
Step 5
For serving, each portion gets 1 cup stew with 1 TB shredded cheddar. You can even slice a small gherkin pickle for a garnish on top.
