How to Make It
Step 1
Pat a portion of salmon dry with a paper towel and season the salmon with 1/8 tsp. salt and pepper.
Step 2
Heat a tablespoon of butter in a pan over medium-high heat. Once hot, press the salmon skin side down in the pan. Turn the heat to medium or medium-low and allow the salmon to cook skin side down for 5-7 minutes.
Step 3
Carefully flip the salmon over so the skin stays intact. Cook for an additional 2-3 minutes, then allow the salmon to rest while you prepare the pesto.
Step 4
Finely chop the the walnuts, parsley, dill, and garlic and place in a bowl. Add the lemon, olive oil, ⅛ tsp. salt and black pepper.
Step 5
Pour the pesto on top of the salmon and enjoy!
