How to Make It
Step 1
Add the cauliflower rice to a pan along with the chicken stock. Bring up to a boil then simmer until all the liquid has reduced and the rice is tender – about 6 minutes. Set aside.
Step 2
Dice the onion, pepper and celery. Heat the olive oil in a frying pan over a medium heat. Add the onion, celery, pepper and ground beef. Stir well to combine and cook until the beef is browned all over and the vegetables are tender – about 6 minutes.
Step 3
Add the spices to the pan and stir well to combine.
Step 4
Add the cooked cauliflower rice and mix into the meat and vegetables. Continue to cook for a minute or two until completely cooked through.
Step 5
Scatter over the sliced scallions to serve.
Ingredients
Ground Beef – 8 ounce
Cauliflower Rice – 2-½ cup, cut pieces
Scallions – 2 small – 3″ long
Cajun Seasoning by Spice Time – 2 tsp
Celery – 1 stick – 4″ long
Chicken Broth, Bouillon Or Consomme, Homemade – 1 cup
Olive Oil – 1 tablespoon
Green Bell Pepper – ½ medium – 2 1/2″ diameter x 2 3/4″
