This rich spinach bake is combined with oozy mozzarella, tangy cheddar, heavy cream, salty Parmesan and baked until bubbling and golden.This makes a great side to roasted meats, perfect to accompany Sunday

How to Make It

Step 1

Preheat the oven to 400 degrees Fahrenheit.

Step 2

Set the spinach in a colander and pour over boiling water to just wilt the spinach. Drain and set aside. Once cool enough to handle squeeze out any excess liquid.

Step 3

Melt the butter in a saucepan and add the cream, mozzarella, cheddar, salt and pepper. Gently heat through, stirring to melt the cheeses until you have a thick sauce. Remove from the heat.

Step 4

Add the spinach to the pan and stir well to combine.

Step 5

Spoon the creamy spinach mixture into a small oven dish in an even layer. Sprinkle over the grated parmesan.

Step 6

Transfer to the oven to bake for 18-20 minutes or until golden and bubbling. Serve hot.
