Start with a whole slab of bacon. Cut the slab into small cubes, about ½” X ½” in diameter. If a whole slab of bacon isn’t available to you, you can chop pre-sliced bacon from a package into very small pieces. Just note you may have a lot of pieces that are exclusively fat. Heat a wide pan on high heat and add the bacon to the pan. Cook the cubed bacon until it’s crispy on all sides and the pan is filled with bacon fat. If you’re using pre-sliced bacon, it will cook up more quickly than cubed bacon. While the bacon is cooking, combine the sauerkraut and THAWED green beans in a mixing bowl. It’s up to you if you’d like to rinse your sauerkraut beforehand or not.
Add the sauerkraut and green beans to the hot pan of bacon. Season the ingredients with all the seasonings except for the dill. Let the sauerkraut cook undisturbed in the bacon fat until it gains a slightly crispy texture. Continually stir and cook the whole pan until you have a consistent mixture of sauerkraut, green beans, and bacon, and all the ingredients are golden brown from the cooked spices. Once done, garnish with the freshly chopped dill.
