How to Make It
Step 1
Remove the avocado from its skin into a bowl. Use the back of a fork to mash the avocado, and combine the ricotta cheese with it.
Step 2
Stir the salt and dill into the mixture. Finely chop the salami. Set aside some of the salami as a garnish for later and mix the remainder into the avocado filling.
Step 3
Prepare a whole cucumber by slicing it in half lengthwise. Wrap and set aside one half of the cucumber for another recipe. Lay down the remaining half on a clean surface, and use a knife or spoon to remove the seeds and core of the cucumber. Make sure the space created is hollow enough to hold the filling – there will be a lot!
Step 4
Spoon the filling into the cored cucumber half. Pack in the filling to avoid a mess. Some filling may rise over the edge of the cucumber, but this is okay.
Step 5
Slice the cucumber into 10 pieces. Top each piece off with the bits of salami that were set aside previously. Enjoy!
