These lightly sweetened banana nut muffins are exactly what you need to start your day! Moist, full of banana flavor, crunchy nuts and chia seeds these are sure to please.
How to Make It
Step 1
Preheat an oven to 300 F. Toast the sliced almonds for 10 minutes until very lightly browned. Then turn the oven up to 350 F.
Step 2
In the meantime pulse together dry ingredients (almond flour, baking powder, chia seeds, sea salt and brown sugar).
Step 3
Add in the eggs, extracts and olive oil and pulse again until very well combined.
Step 4
Evenly distribute batter to 12 cupcake tins filled with cupcake liners.
Step 5
Bake for 10 minutes and then sprinkle the almonds over the top of the muffins and then continue to bake them until fully cooked around 20-25 minutes total. They should be lightly browned.
