Beef and broccoli is one of my all-time favorite takeout meals, but it is usually loaded with sugar. Sugar isn’t necessary to make this dish delicious, just a nice balance of flavors from the soy sauce and sesame seed oil will do. The recipe calls for black pepper, which is one of the key flavors to this dish. Wash and cut broccoli by cutting thick stems from the florets. If you’re using chinese broccoli cut the stems in half where the leaves begin and separate the two sections into separate piles. If using regular broccoli, cut the stems from the florets and use a vegetable peeler to peel thick skin from broccoli stems. Cut broccoli stems into ¾” slices on a bias and cut florets into manageable sizes. Mince some ginger too.
Slice the beef into thin strips. Preheat a large sauté pan or wok over high heat until hot. Add the oil. Add the beef and sauté until it’s halfway cooked. Add the salt, black pepper, oyster sauce, and tamari.
Add the broccoli stems and michiu wine and cover with a lid for 1-2 minutes. Take off the lid and add the florets and cook until they are nicely green and cooked through, and most of the liquid has evaporated. Drizzle on the sesame seed oil to serve.
