Heat a tablespoon of olive oil in a frying pan over a medium heat. Add the bacon and cook until crisp. Set aside to cool.

Roughly slice the lettuce and thinly slice the scallions. Add to a salad bowl and toss to combine.

Tear the chicken into bite sized chunks and add to the bowl. Snap the crisp bacon into bite sized pieces and add to the bowl. Season and drizzle with olive oil, toss to combine.

Scatter over the grated cheese, salt and pepper. Toss to combine.
Step 5
Spoon the sour cream onto the salad and finely chop the chives over the salad to serve.
