You can also double your serving for a more protein-packed and filling meal.*Please note you may want to use additional pork rinds and egg for the sake of having enough to bread your chicken, but this extra will not be consumed.

How to Make It

Step 1

Preheat an oven to 350 degrees. Slice your chicken breast(s) into thin slices. Place a piece of plastic wrap over the chicken and pound them to a ¼” thickness.

Step 2

Pat each piece of chicken dry with a paper towel.Sprinkle the salt, pepper, and cayenne over the chicken.

Step 3

To make the breading, pulse together the pork rinds, parmesan, paprika, and onion powder until you have a fine breading.

Step 4

Spread the breading on a large plate and whisk together an egg in a bowl. Have this ready to go with you seasoned chicken.

Step 5

Dip each piece of chicken one by one in the egg, shake off the excess liquid, then press into the breading. Press the breading on the chicken so it’s entirely covered before setting on a sheet tray lined with parchment paper.

Step 6

Bake the tray for 30 minutes, flip the chicken over, and bake for an additional 10-15 minutes until done and crispy.

  • Boneless Skinless Chicken Breast – 12 ounce
  • Salt – ¼ teaspoon
  • Black Pepper – ¼ teaspoon
  • Cayenne – ¼ teaspoon
  • Fried Pork Rinds – 3-½ cup, whole pieces
  • Parmesan Cheese – 1 cup, shredded
  • Onion Powder – ¼ teaspoon
  • Paprika – ½ teaspoon
  • Raw Egg – ½ large
