Spanish cauliflower rice is full of smoky flavor, is a little spicy, and is a tad crunchy too. This recipe has the perfect amount of sauteed onion, carrot, and jalapeno to enhance the flavors of the spiced cauliflower rice. A generous sprinkle of fresh cilantro and a squeeze of lime juice makes the side dish vibrant and pretty to look at too!
How to Make It
Step 1
Prepare the ingredients by dicing the onion, carrots, and jalapeno into tiny pieces. Melt the butter in a wide pan on medium heat, and toss in the veggies. Cover the pan and cook for about 5 minutes, or until the ingredients are tender.
Step 2
Stir in the cauliflower rice, salt, paprika, cumin, and cayenne. Cook the ingredients, uncovered, until the “rice” is soft and hot – about 3-4 minutes.
Step 3
In the last stage of cooking, chop and stir in the cilantro. Transfer the Spanish cauliflower rice to a serving dish, and squeeze fresh lime juice over it. Enjoy!
