After tasting these parmesan zucchini fries, you may never want a regular french fry again! The crispness of the seasoned crumbs are so savory, and the addition of some freshly grated parmesan cheese seals the deal. Serve these zucchini fries alongside your keto burger or a hearty chicken dish, and you’ll have the perfect meal that leaves you satisfied!

How to Make It

Step 1

Preheat the oven to 425 degrees. Line a large baking sheet with parchment paper, and spray it well with pan spray.

Step 2

Peel the zucchini, and slice it into fries that are about ½-inch X 3 inch. The yield should be about 1 lb, so keep this in mind when selecting your zucchinis for this recipe. They will lose a LOT of water weight in the oven!

Step 3

In one bowl, whisk together two eggs and set it aside. In a second bowl, combine the remaining ingredients.

Step 4

To coat the zucchini fries, dip them one by one in the egg mixture, let the excess egg drip off, and then roll them in the dry mixture. Then, gently set them on the lined baking sheet.

Step 5

Bake the zucchini fries in the oven for about 30 minutes, flipping them over halfway through with a spatula. For golden brown edges, you can cook them under the broiler for a minute or two. Keep an eye on them to avoid burning.
