This low carb mash is loaded with flavor and fats from tangy Parmesan and sour cream, infused with aromatic chives.This is a great side dish to serve with grilled or roasted meats or white fish.
How to Make It
Step 1
Dice the cauliflower into florets. Add the florets to a pan of boiling water and simmer until tender. About 5 minutes. Drain the cauliflower and pat dry.
Step 2
Add the cauliflower to a food processor along with the garlic, Parmesan and butter. Season to taste and blend to a mash.
Step 3
Add the sour cream and blend again.
Step 4
Transfer the mash to a serving dish and stir through the chives to serve.
