These crusted pork fillets are coated in a crumb of ground almond, Parmesan, lemon zest and thyme, then pan fried until crisp and golden.Perfect served with roasted vegetables or a green

How to Make It

Step 1

Add the almonds, Parmesan, thyme leaves, lemon zest, salt and pepper to a mixing bowl. Stir well to combine.

Step 2

Beat the egg in a bowl.

Step 3

Dip the pork loin fillets into the beaten egg until well coated.

Step 4

Dip the pork fillets in the breading and press down gently so that it sticks to the meat.

Step 5

Heat the oil in a frying pan over a medium-high heat. Add the pork fillets, cooking for 4-5 minutes on each side or until the pork is completely cooked through and the crumb is crisp and golden.
