Step 1
Place the cashews in a bowl and cover with boiling water. Soak overnight or up to 12 hours. Drain the water and rinse the cashews.

Transfer the cashews to a high-power blender. Add the water, pumpkin puree, tahini, pumpkin pie spice, maple-flavored syrup, and salt. Blend for 2-3 minutes.

Scrape off the sides of the blender. Blend for another 2-3 minutes until smooth. Taste the hummus and adjust the sweetness.
